Avocado Burgers

1 pack Schweid & Sons The Butcher's Blend Patties

2 Red Bell Peppers (chopped)
-
1 cup Frozen Whole Kernel Corn (thawed)

1/2 cup Onion (chopped)
-
1 tbsp Olive oil
-
1/2 tsp Salt
-
1/4 cup Grain-Free Tortilla Chips with Lime (crushed)

1 Tomato (chopped)
-
2 Small Avocados (mashed)
-
1/2 cup Queso Fresco, crumbled (or Goat Cheese)

1. Preheat oven to 450°F. Toss together bell peppers, corn, onion, oil, and salt on a rimmed baking sheet.

2. Place Burgers on a rack in a shallow roasting pan. Press chips into tops of burgers.

3. Bake 20 minutes or until vegetables are beginning to brown, stirring once, and burgers are done. Stir tomato into vegetables.

4. Spread avocado over burgers; top with cheese. Serve with salsa.
