- 4 5.4 oz Schweid and Sons Burger Patties
- 2 Red Bell Peppers, chopped
- 1 cup Frozen Whole Kernel Corn, thawed
- 1/2 cup Onion, chopped
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 cup Grain-Free Tortilla Chips with Lime, crushed
- 1 Tomato, chopped
- 2 Small Avocados, mashed
- 1/2 cup Queso Fresco, crumbled or Goat Cheese

Instructions
- Preheat oven to 450°F. Toss together bell peppers, corn, onion, oil, and salt on a rimmed baking sheet.
- Place burgers on a rack in a shallow roasting pan. Press chips into tops of burgers.
- Bake 20 minutes or until vegetables are beginning to brown, stirring once, and burgers are done. Stir tomato into vegetables.
- Spread avocado over burgers; top with cheese. Serve with salsa.
