1 Pack Schweid & Sons The Cajun Style Tri-Tip Blend

1 Each Head of Romaine Lettuce (chopped)

1-2 Cups baby arugula
-
1-2 Cups baby kale
-
Parmesan cheese (shaved into ribbons)

2 Cups Focaccia (torn or cut into cubes)

2-3 Tbsp olive oil (for Focaccia Croutons)

Salt and pepper

1 Each Egg Yolk
-
1-2 tsp Anchovy Paste
-
1 Each Garlic Clove (finely grated)
-
1 tsp Dijon Mustard
-
1-2 tsp Lemon Juice
-
1/3 Cup olive oil (for Caesar Dressing)

1/4 Cup Finely grated Parmesan
-

Freshly Cracked Black Pepper

1. Make the Croutons: Preheat oven to 375°F. Toss focaccia pieces with 2-3 Tbsp of olive oil, salt, and pepper to taste. Spread on a baking sheet and bake for 10–15 minutes, tossing once, until golden and crisp. Set aside.

2. Prepare the dressing: In a bowl, whisk together the following ingredients: Egg Yolk - Anchovy Paste - Garlic - Dijon Mustard - Lemon Juice. Slowly drizzle in 1/3 Cup of olive oil while whisking constantly until emulsified. Stir in finely grated Parmesan and season with salt and pepper to taste.

3. Cook the Steak Tips: Heat a cast iron skillet over medium-high heat. Add Schweid & Sons Cajun Style Tri-Tip Blend steak tips in a single layer and cook for 2–4 minutes per side, until well-seared and cooked to your desired doneness. Let rest, then slice into bite-sized pieces.

4. Build the Salad: In a large bowl, combine the following: Chopped Romaine - Baby Arugula - Baby Kale. Add croutons and drizzle with dressing. Toss until evenly coated.

5. Finish & Serve: Divide salad among plates and enjoy!
