1 (8-oz) Sweet potato

2 (5.4-oz) ground beef patties

1/2 Tbsp Olive oil

1/4 Tsp Salt (divided)

1/4 Tsp Pepper (divided)

1/2 Avocado (halved)

2 Bibb Lettuce Leaves
-
1/2 Small red onion (thinly sliced)
-
1 Roma tomato (chopped)
-
2 Tbsp Chopped fresh cilantro
-
2 Cups Chopped kale
-
1/2 (10-oz) pkg Angel hair coleslaw

1/4 Cup Green goddess dressing

1 Tbsp Lemon Juice

1. Preheat oven to 425°F. Slice potato crosswise into 4 (½-inch-thick) rounds. Toss potato slices with oil and ⅛ tsp each salt and pepper. Place in a single layer on a rimmed baking sheet.

2. Bake 20 minutes, turning potatoes after 10 minutes.

3. Meanwhile, cook patties in a grill pan or cast-iron skillet over medium-high heat 5 to 6 minutes per side or until done.

4. Mix together avocado and ⅛ tsp each salt and pepper in a bowl, mashing slightly with a fork.

5. Place 2 potato rounds on each of 2 plates. Top with lettuce, burgers, mashed avocado, onion, tomato, and cilantro.

1. Toss together all ingredients in a bowl.
