Meatloaf Ingredients
- 2 lbs Schweid & Sons C.A.B. All American
- 1 lb Ground Sausage, mild
- 2 large Eggs
- 1 whole Onion, diced
- 1 can 26 ounce Rotel Diced Tomatoes with Green Chilies, drained
- 1/2 tsp Ground Black pepper
- 1/2 tsp salt
- 2 cans 12 ounce Contanada Tomato Sauce, reserve some for topping
Guacamole
- 3 large Ripe Avocadoes
- 2 Roma Tomatoes, diced
- 1 small Red Onion, diced
- 1 tsp Garlic, minced

Instructions
- Preheat Oven to 350°F.
- Combine topping to create fresh guacamole, set aside and chill.
- Prepare meatloaf by combining meatloaf ingredients and mold into loaf.
- Top meatloaf with tomato sauce, cover with foil and bake for 1 hour 30 minutes.
- Take foil off and brown for an additional 10 minutes.
- Cut meatloaf into slices and serve each portion topped with 2oz of the chilled guacamole and serve.
