1 Pack Schweid & Sons Cajun Style Tri-Tip Blend

12 oz Rigatoni Pasta

1 Each Bell Pepper (diced)

1 Each Small Onion (diced)
-
1-2 tsp Cajun-Style Seasoning

16 oz Can of Diced Tomatoes

2 Tbsp Butter
-
1/4 Cup Grated Parmesan Cheese
-
1/4-1/2 Cup Heavy Cream
-
salt & pepper (to taste)

2-3 Each Scallions
-
Extra Parmesan (optional)

1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook rigatoni until al dente according to package instructions. Reserve about ½ cup pasta water, then drain.

2. Build the Sauce: In a large skillet over medium heat, add a drizzle of oil. Add diced bell pepper and onion and cook for 5–7 minutes, until softened. Stir in Cajun seasoning and cook for another minute until fragrant. Add diced tomatoes and simmer for 3–5 minutes. After simmering, stir in butter and parmesan. Reduce heat to low and add cream, stirring until the sauce is smooth and slightly thickened. Season with salt and pepper as needed.

3. Combine Pasta & Sauce: Add cooked rigatoni to the sauce along with a splash of reserved pasta water. Toss until the pasta is well coated and glossy. Adjust consistency with more pasta water if needed.

4. Cook the Steak Tips: While the pasta finishes, heat a cast iron skillet over medium-high heat. Add Schweid & Sons Cajun Style Tri-Tip Blend marinated steak tips in a single layer and cook for 3–5 minutes per side, until well-seared and cooked to your desired doneness. Remove from heat and let rest briefly.

5. Serve: Divide creamy rigatoni among bowls. Top with Cajun steak tips (keeping them separate from the sauce as the star). Finish with sliced scallions and extra Parmesan if desired
