The Burger
- 4 Schweid and Sons Butcher's Blend patties
- 1 tbsp taco seasoning
- 1 tsp garlic salt
- 1/4 tsp pepper
- 1/4 cup olive oil mayonnaise
- 1 tsp Lime Juice
- 12 iceberg lettuce leaves
- 1 avocado, sliced
- 1/2 cup fresh salsa
Side Dish
- 1 pkg cauliflower florets
- 1 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp ground cumin
- 1/2 tsp salt
- 1 tbsp Lime Juice
- 3 tbsp finely chopped fresh cilantro
- 1/4 cup shredded Mexican-blend cheese

- For the burger: Preheat grill to medium heat. Combine seasoning, garlic salt, and pepper in a small bowl; sprinkle over both sides of patties. Grill burgers, covered, 6 minutes per side or until no longer pink in centers. Meanwhile, combine mayonnaise and lime juice. Arrange lettuce in 4 stacks; top with burgers, mayonnaise, avocado, and salsa. Wrap lettuce around burgers; serve immediately.
- For the side dish: Preheat oven to 425°F. Toss together cauliflower, oil, garlic, cumin, and salt in a 13- x 9-inch baking dish; let stand 10 minutes. Bake 15 minutes; remove from oven. Sprinkle with lime juice and cilantro; stir. Sprinkle with cheese. Bake 4 minutes longer or until cheese is melted.
