- 2 Large Onions Thinly Sliced
- 2 Tbsp Olive Oil or Butter
- 1/4 Tsp Baking Soda Dissolved in 1/4 cup water
- Salt to taste (Optional)
- 2 Patties Schweid & Sons Smokehouse Blend
- 4 Slices Swiss Cheese Thin
- 2 Burger Buns Toasted
- Scallions Thinly sliced, for topping
- 1. Prepare the Onions: Thinly slice the onions. The thinner the slices, the quicker they will caramelize.
- 2. In a large skillet or frying pan, heat the olive oil or butter over medium-high heat until it shimmers. Add the thinly sliced onions to the hot skillet and saute for about 5 minutes. Add ½ cup water to the pan and continue to stir. When all the water has evaporated, add in the baking soda water and continue to stir constantly. The baking soda will help speed up the caramelization process.
- 3. Stir the onions frequently to ensure even cooking. Continue cooking the onions over medium-high heat for about 10-15 minutes, or until they are deeply golden brown and caramelized. Be careful not to burn them; adjust the heat as needed. Once the onions are caramelized to your liking, season them with salt if desired.
- 4. Remove the caramelized onions from the heat and add a few Tbsp oil to the pan. Cook Burgers to desired temperature, flipping once and adding the cheese in the last minute of cooking.
- 5. Assemble Burgers by placing on toasted bun and topping with caramelized onions and sliced scallions. Enjoy!
