Veggie Smothered Burgers

Veggie Smothered Burgers time! A Burger doesn't always have to be sandwiched in between two buns, topped with cheese, and loads of unhealthy toppings. Although they are delicious when eaten that way, smothering a patty with your favorite vegetables is another way to enjoy a Schweid & Sons Burger.

A Schweid & Sons Burger has a steak-like flavor and bite that can allow you to enjoy the flavor of beef without needing all of the extra fixin's. This recipe calls for onions, green bell peppers, and mushrooms on the Burger. With a side of sweet potatoes and chopped kale.

After cooking your vegetables will be tender and a perfect addition to the top of your Burger. This recipe is perfect for a light meal when you still want that Burger flavor.

  • 6 Schweid & Sons Burger Patties

  • 1 Tsp Salt (divided)

  • 1 Tsp Pepper (divided)

  • 2 Tbsp Avocado Oil

  • 1 Onion (thinly sliced)

  • 1 Green Bell Pepper, cut into strips

  • 8 Ounces Sliced Mushrooms

  • 2 Cloves Garlic (minced)

  • 1 Tbsp Arrowroot

  • 2/3 Cup Organic Chicken Broth

  • 4 Sweet Potatoes (peeled and cut into 2-inch pieces)

  • 2 Tbsp Avocado Oil

  • 1/2 Tsp Lemon Pepper Seasoning

  • 1/4 Tsp Garlic salt

  • 16 Ounces Chopped Kale

  • 2 Tsp Fresh Thyme (chopped)

  • 1. Sprinkle patties with ½ tsp each salt and pepper. Cook according to package directions in a large skillet. Remove from skillet; keep warm.

  • 2. Cook onion, bell pepper, mushrooms, garlic, and ½ tsp each salt and pepper in skillet 5 minutes.

  • 3. Stir together arrowroot and broth. Add to skillet. Cook, stirring constantly, 2 to 4 minutes or until sauce is thickened and vegetables are tender. Top Burgers with vegetables.

  • 1. For side dish: preheat oven to 400°F. Toss together potatoes, oil, lemon-pepper, and garlic salt on a lightly greased large rimmed baking sheet.

  • 2. Bake 25 minutes. Stir in kale, and bake 15 minutes longer or until potatoes are tender, stirring occasionally. Sprinkle with thyme.
