2 Packs Schweid & Sons The Butcher's Blend 1lb Ground Beef Brick

French rolls

Salt and pepper

1/2 cup of mayonnaise
-
4 oz of arugula
-
4 oz of gruyere
-
4 oz of maytag blue
-
8 Slices of cooked thick cut bacon
-
Caramelized onion jam See below

4 slices of bacon, diced
-
3 Tbsp Butter
-
3 Yellow onions, minced
-
4 oz Balsamic Vinegar
-
2 Cloves Minced Garlic
-
Salt (to taste)

Pepper (to taste)

1. Form meat into four oval patties, about half pound each. Season patties generously with salt and pepper. Grill until desired doneness; remove from grill and let rest. Toast bun only on the cut side until light brown. Smear about 2 tbsp of mayo on the top and bottom bun.

2. Place cooked patties on the bottom bun then add two pieces of bacon. Sprinkle 1 oz of cheese, 3 tablespoon onion jam and arugula.

1. For The Onion Compote: Cook bacon and onions in a large sauté pan until bacon is rendered, about 8 minutes.

2. Reduce the heat to low, add butter and cook onions and garlic until soft about 10 more minutes. Add vinegar and sugar and cooked until thickened. Season with salt and pepper to taste.
