Stuffed Bifteki

2 lbs Schweid & Sons 80/20 ground beef

1 whole onion minced or grated

1 clove garlic minced or grated

1 handful crumbled Feta cheese

1/2 lb kasseri or white cheese of your choice

20 whole olives cut in half at the pit

1 handful parsley washed

1/2 tbsp sea salt

1 whole lemon juiced

3 glunks olive oil

1. Lay out the ground in a big/wide bowl. Add all ingredients aside from the kasseri or white cheese.

2. Mix well with your hands; it really needs to be with your hands…pretend you are giving someone a massage. You want to make sure all the ingredients get mixed in well.

3. Once this is done, take the cheese and cut into mini cubes.

4. Lay about 2 tbsp. of meat in your hand and pat flat; then add the cheese to the center and cover into a patty leaving no ends open. If you do, the cheese will sneak out.

5. Once your patties are made, pre heat a skillet or pan and place each patty in the pan.

6. Once they have a nice color, remove from heat and add lemon.

7. Serve with bread, broccoli, lettuce raps, or rice.
