Ingredients
Smashed Avocado-Sweet Potato Burgers
- 1 (8-oz) sweet potato
- 1/2 Tbsp olive oil
- 1/4 tsp Salt, divided
- 1/4 tsp Pepper, divided
- 2 (5.4-oz) ground beef patties
- 1/2 avocado, halved
- 2 Bibb Lettuce Leaves
- 1/2 small red onion, thinly sliced
- 1 Roma tomato, chopped
- 2 Tbsp chopped fresh cilantro
Green Goddess Slaw
- 2 cups chopped kale
- 1/2 (10-oz) pkg angel hair coleslaw
- 1/4 cup green goddess dressing
- 1 Tbsp Lemon Juice

Smashed Avocado-Sweet Potato Burgers
- Preheat oven to 425°F. Slice potato crosswise into 4 (½-inch-thick) rounds. Toss potato slices with oil and ⅛ tsp each salt and pepper. Place in a single layer on a rimmed baking sheet.
- Bake 20 minutes, turning potatoes after 10 minutes.
- Meanwhile, cook patties in a grill pan or cast-iron skillet over medium-high heat 5 to 6 minutes per side or until done.
- Mix together avocado and ⅛ tsp each salt and pepper in a bowl, mashing slightly with a fork.
- Place 2 potato rounds on each of 2 plates. Top with lettuce, burgers, mashed avocado, onion, tomato, and cilantro.
Green Goddess Slaw
- Toss together all ingredients in a bowl.
