Chili Con Carne Burgers
Skillet Cauliflower and Bell Peppers
- 1 cup cauliflower florets
- 1/2 (14-oz) pkg frozen pepper stir-fry blend
- 1/2 Tbsp olive oil
- 1/2 Tbsp fajita seasoning (or use Southwest seasoning)
- 1/8 tsp salt
- 1/8 tsp pepper
- 1 1/2 Tbsp chopped fresh cilantro (optional)

Chili Con Carne Burgers
- Preheat grill pan over medium-high heat. Add patties, and cook 5 to 6 minutes per side or until no longer pink, topping with cheese during the last 2 minutes of cooking.
- Meanwhile, heat chili according to package directions. Top burgers with chili and tortilla chips. Serve with a knife and fork.
Skillet Cauliflower and Bell Peppers
- Cook cauliflower and stir-fry blend in a large nonstick skillet, covered, over medium heat 6 to 8 minutes or until thawed and water is evaporated, stirring occasionally.
- Add oil, seasoning, salt, and pepper; sauté 6 minutes or until vegetables are browned. Sprinkle with cilantro, if desired.
