We partnered with the Boston Epicruean Club ACF to sponsor the Everett Highschool Culinary program for a Slider Burger Challenge using our Butcher's Blend.

Four teams of culinary students presented Sliders to be judged by notable chefs in the Boston area and there was 1 winner: The Team Brodie Burger!

The Brodie Burger is Grilled Pineapple, Candied Bacon, Cinnamon Sauce, Brie Cheese, and Arugula served on a toasted Brioche Bun

  • 1/2 Pineapple

  • 1/4 cup Lime Juice

  • 1/4 tsp Rosemary

  • 1/2 tsp Thyme

  • 1/3 cup Honey

  • 1 tsp Cinnamon

  • 1/4 tsp Nutmeg

  • 10 stips Bacon

  • 1 cup Brown Sugar

  • 1 tbsp Black Pepper

  • 5 Sliders Schweid & Sons The Signature Blend Sliders

  • 5 Brioche Slider Buns

  • Arugula

  • Brie Cheese (sliced)

  • 1. Mix lime juice and herbs together

  • 2. Vaccum seal pineapple with marinade

  • 3. Sous Vide pineapple for 1 hour

  • 4. Grill and slice pineapple

  • 1. Mix all ingredients together and whisk until incorporated

  • 1. Layout bacon on a sheet pan and distribute brown sugar and black pepper over bacon.

  • 2. Bake at 350 for 10 minutes or until golden brown.

  • 1. Use Schweid & Sons Butcher's Blend 1lb Brick and section into 5 portions. Flatten out potions to slider patties.

  • 2. Pre-heat skillet or flat top on medium high heat

  • 3. Place Burgers carefully on heated surface and cook for 2 minutes. Carefully flip and cook for an additional 2 minutes or until cooked to desired temperature.

  • 4. Assemble the Burger: Brioche bottom bun, cinnamon sauce, Schweid & Sons Slider Burger, Arugula, Brie Cheese, Grilled Pineapple, Candied Bacon.
