Marisa’s Meatloaf Muffins

This is from a favorite childhood recipe of a Schweid & Sons employee that was passed down in the family. We hope you & your family can enjoy it too!
As the name suggests, these mini meatloaf creations are made in a muffin tin and are the perfect portion to please anyone. They are just as good as leftovers, too!
The Meatloaf Muffin Recipe
Use your favorite meatloaf recipe or try the below easy recipe. Be sure to mix the ingredients well.
- 1 ½ lbs Schweid & Sons Butchers Blend
- 1 cup plain, unseasoned breadcrumbs
- 3 large eggs
- 3 Tbsp milk
- 1 garlic clove, minced
- 1 medium onion, chopped
- 1 ¼ tsp salt
- ¾ tsp pepper
Spray your muffin tin and preheat your oven to 350°. Divide the ground beef mixture evenly into the 12 portions, one for each muffin tin.
Slightly press down to ensure a flat bottom that will get crispy after baking. Place the muffin tin on a baking sheet and bake the meatloaf muffins for 20-25 minutes.
The Sauce
During this first period of baking, get together a sauce of your choice to top your mini meatloaves with (good ‘ol ketchup will do the trick in a pinch!). For a more flavorful sauce, whisk together the ingredients below.
- 3 Tbsp Ketchup
- 2 Tbsp Mustard
- 1 Tbsp Worcestershire sauce
Generously brush the individual muffins with the sauce of your choice and bake in the oven for 10-15 more minutes.
Since these meatloaves are mini, they will only take a fraction of the time to bake in the oven.
Pro tip: Make these mini meatloaf muffins in bulk and freeze them so you have an easy reheatable meal on demand.
