Let’s take the baked potato, for instance. While it’s a staple in most American kitchens (although we’d argue so is ground beef!), we can probably all agree that it’s a little humdrum on its own. So, you might be wondering what a baked potato has to do with ground beef. Stay with us here; we promise it makes sense!

 

Across the pond in England, they call this a jacket potato. The English are not afraid to put anything and everything on their baked potatoes. Check out The Spud Bros, a couple of lads that take their love for loaded jacket potatoes to the next level. A baked potato can be a side dish to pretty much any meal, but it can also be an easy main dish when layered with premium ground beef and other fixings. Think of it like a loaded taco, but the potato is the shell. It makes for an easy weeknight meal when time, energy, and ingredients are at a premium. 

 

It’s also the perfect vessel for lots of leftovers. Cook too many burgers at that family barbecue over the weekend? No problem. Crumble up those cooked burgers and sauté them up with that half an onion in your refrigerator and that bag of frozen veggies in the freezer. Or maybe you have some leftover chili you can repurpose atop a baked potato. Layer on some cheese, sour cream and whatever your audience likes, and you are good to go for a crowd-pleasing meal.  

 

Don’t have leftovers? Make a taco baked potato spread for your dinner guests to pick and choose what they want to top their baked potatoes with. Set out the baked potatoes, bowls of cheese, beef, sour cream, and more for the perfect setup. Gather up some or all of the below ingredients to get started with your Taco Stuffed Baked Potatoes!

 

Taco Baked Potato Ingredients

  • Premium ground beef, try The Butcher’s Blend or The Signature Blend 1lb Bricks
  • Taco seasoning
  • Red and/or green onions
  • Shredded Cheese
  • Refried or regular beans
  • Tomatoes or salsa
  • Guacamole
  • Sour Cream
  • Want heat? Add hot sauce or chipotle mayonnaise

Prepping and cooking your potato will take the most time, but it’s super easy. Clean those spuds well, and then take a fork and poke a bunch of holes around the entire potato. Don’t forget to poke holes to allow the steam to come out while cooking, you don’t want a baked potato explosion all over the place! Season them (or don’t), and then choose your cooking method. We suggest coating your potatoes with olive oil and kosher salt to get a nice crispy skin on your baked potatoes.

 

Slow cooker

For planning ahead and having things ready when you get home from a busy day, this can be a life saver. Wrap the potatoes in foil and cook on low for 6 to 10 hours.

 

Oven

The most traditional method is putting the potatoes (unwrapped) right on a baking sheet or parchment paper and cooking at 400-425 degrees for about one hour.

 

Microwave

If you’re in a time crunch, take advantage of this technique! Place your potato on a microwave safe plate and cook for about 5 minutes. Then flip and microwave for another 5 minutes until the potato is soft. When they’re done, if you want crispier skin, cover with oil and salt and throw that potato in the oven for 10-15 minutes at 425 degrees.

 

Air fryer

Some say this new method of cooking pretty much anything makes the best baked potato. While not a time saver (400 degrees for about 45 minutes), they come out perfectly crispy on the outside and fluffy on the inside. Make sure to flip them halfway through the cook time so both sides get cooked evenly.
