Black Garlic Burger

Take black garlic, for instance. This aged garlic has less of the traditional tang of fresh garlic and more subtle sweet notes along the lines of licorice, molasses, or even balsamic vinegar.

 

Black garlic starts as fresh garlic, but when put in a warm, moist, temperature-controlled environment for up to several weeks, it ages and turns black in color due to a natural chemical process known as the Maillard reaction.

 

Black garlic was actually first used for medicinal purposes in Asia before becoming part of more mainstream culinary culture. Compared to fresh/raw garlic, black garlic has antioxidants, vitamins, and nutrients that can have health benefits.

 

Its use has gained more recent popularity thanks to national and internationally broadcast cooking shows and even an episode of an animated sitcom centered around making a black garlic burger.

 

So, while black garlic used to be a more obscure find in specialty Asian grocery stores, you’ll now find this popular Burger ingredient in larger chain grocery stores.
