Zucchini Fries: Preheat oven to 425°F. Whisk together eggs and 3 Tbsp water in a shallow bowl. Dredge zucchini in flour, and dip in beaten egg; dredge in breadcrumbs, pressing gently to adhere. Place zucchini on a greased baking sheet, and coat with cooking spray. Bake 25 minutes or until browned and crisp. Sprinkle with salt and pepper while hot.
